As a former customer of J2store I wonder what I have to do to keep the shop updated.
Meanwhile, I have an error when I try to edit the articles. The shop seems to work fine, but as soon as I try to edit a product, this error appears.

It looks like you are running J2Store v 4.0.5 or lower. There was a breaking change in Joomla 5.2.x that broke the previous J2Store versions lower than 4.0.7 so to fix that error as well as many other previous bugs, it is recommended to update to the latest version 4.0.12. You can simply install it on top of your current j2store and you should be good to go. (Of course always take a backup before just in case.)
